What do you do when life showers you with lemons? Off course, you make a chilled lemonade out of them and refresh your soul!
So one fine day, I walked up to my refrigerator to find only 2 crucial ingredients lying there, which I had to somehow use for my breakfast!
Yes, they were Paneer or Cottage Cheese as you call it and some Wholewheat Multigrain bread!
So, I created a simple and quick recipe out of it, which you can modify a hundred times to suit your taste buds and the amount of time you have in hand.

So, I created a simple and quick recipe out of it, which you can modify a hundred times to suit your taste buds and the amount of time you have in hand.
Ingredients:
- Few slices of Bread (I prefer using wholewheat multigrain/bran bread or any other healthy alternative)
- Some Paneer
- Ghee
- Spices (Cumin, Red Chilli, Salt)
Optional:
- Your choice of veggies to add to the paneer filling (onions, tomato, bell pepper etc.)
Recipe:
- So the first step involves prepping the paneer filling. Since I didn't have the time to chop and add veggies to my paneer filling, I opted for just the paneer inside my toast.
- Take a non stick tawa or pan and add to it 1 teaspoon of ghee. You can replace it with an oil of your choice, but believe me, paneer roasted in ghee tastes divine!!
- Now on low flame, to the ghee, add some cumin seeds, red chilli powder (the spicier, the better) and add to it crumbled paneer. Add salt as per taste.
- Roast the paneer on low flame for 1-2 minutes till it starts becoming a little crisp and feels cooked.
- Now add this filling to your bread slices and voila! your toasts are ready in jiffy.
- If you are planning to add some veggies, make sure you toast and cook the veggies before adding paneer as we want crisp and cooked veggies in our toast.
